Air Fryer Crispy Artichokes

Ingredients

For the Artichokes:

  • 1 can whole artichoke hearts in water
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano
  • 2 tbsp arrowroot powder
  • 2 tbsp finely grated parmesan

For the Lemon Herb Aioli:

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp finely chopped basil
  • 2 tsp lemon zest
  • 1 tsp lemon juice
  • 1/4 tsp salt

Instructions

  1. Preheat air fryer to 400°F for 5 minutes.
  2. Remove canned artichoke hearts and halve them carefully.
  3. Pat artichoke halves dry on paper towels to remove excess moisture.
  4. Toss artichokes with olive oil in a bowl.
  5. Add garlic powder, salt, pepper, and oregano; stir gently.
  6. Add arrowroot powder and stir to coat evenly.
  7. Add grated parmesan and mix thoroughly.
  8. Spray air fryer basket generously with cooking spray.
  9. Arrange artichokes in single layer; sprinkle any remaining parmesan on top.
  10. Air fry 5 minutes, flip each piece, then cook 5 additional minutes.
  11. While cooking, combine all aioli ingredients together.
  12. Serve artichokes with lemon herb aioli.
