Air Fryer Crispy Artichokes

Ingredients
For the Artichokes:
- 1 can whole artichoke hearts in water
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried oregano
- 2 tbsp arrowroot powder
- 2 tbsp finely grated parmesan
For the Lemon Herb Aioli:
- 1/2 cup mayonnaise
- 2 cloves garlic, minced
- 1 tbsp finely chopped basil
- 2 tsp lemon zest
- 1 tsp lemon juice
- 1/4 tsp salt
Instructions
- Preheat air fryer to 400°F for 5 minutes.
- Remove canned artichoke hearts and halve them carefully.
- Pat artichoke halves dry on paper towels to remove excess moisture.
- Toss artichokes with olive oil in a bowl.
- Add garlic powder, salt, pepper, and oregano; stir gently.
- Add arrowroot powder and stir to coat evenly.
- Add grated parmesan and mix thoroughly.
- Spray air fryer basket generously with cooking spray.
- Arrange artichokes in single layer; sprinkle any remaining parmesan on top.
- Air fry 5 minutes, flip each piece, then cook 5 additional minutes.
- While cooking, combine all aioli ingredients together.
- Serve artichokes with lemon herb aioli.
