Antipasti

Ingredients

  • Provolone cheese, cut into slices
  • Fresh mozzarella cheese, cut into cubes or buy small balls
  • Prosciutto, rolled
  • Salame, rolled
  • Roasted red peppers, cut into slices
  • Marinated artichoke hearts
  • Marinated mushrooms
  • Assorted olives
  • Lettuce greens, rinsed and chopped
  • Cherry tomatoes, halved lengthwise
  • [[Garlicky Oregano Dressing]]

Optional add-ons: sardines, anchovies, chunks of Parmesan or Pecorino, peperoncini, pickled onions, oil and vinegar

Instructions

  1. Grab your best and biggest platter. If you don’t have a big platter, use a rimmed baking sheet.
  2. Space rolled salami evenly around the edge of your platter, leaving some hanging off the edge.
  3. Tuck rolled prosciutto in between the salami.
  4. Tuck provolone slices in with the meats.
  5. Tuck roasted red pepper strips in with the meats and cheese.
  6. Fill the center with chopped lettuce greens.
  7. Top the lettuce with marinated artichoke hearts.
  8. Add marinated mushrooms between the artichokes.
  9. Scatter assorted olives throughout.
  10. Add fresh mozzarella cubes or balls.
  11. Top with halved cherry tomatoes.
  12. Serve with [[Garlicky Oregano Dressing]] and serving utensils.
