Any Fruit Crisp

Ingredients
Topping:
- 1 cup flour*
- ½ cup regular sugar
- ¾ cup dark brown sugar
- 1 cup oats
- 1 stick salted butter (unsalted works with pinch of salt)
Filling:
- Zest of 1 lemon (or orange/lime)
- Juice of 1 lemon (or orange/lime)
- ¼ to ½ cup sugar (adjust per fruit sweetness)
- 2 tablespoons flour*
Fruit:
- Enough to fill baking dish (frozen fruit acceptable, defrost first)
*Gluten-free 1:1 flour substitute acceptable
Instructions
- Combine fruit with citrus zest, juice, ¼–½ cup sugar, and 2 tablespoons flour in buttered baking dish.
- Mix 1 cup flour, both sugars (½ regular, ¾ brown), and oatmeal by hand. Cut butter into squares and incorporate with hands until clumpy. Distribute topping over fruit mixture until mostly covered.
- Save excess topping in refrigerator for another crisp if needed.
- Bake at 350°F for approximately one hour (extend for crispier texture).
- Cool briefly to allow juices to settle. Serve with yogurt-honey or ice cream.
- Prepare ahead and reheat in oven; remove a few minutes early to prevent excessive browning.
