Bacon Scones

Ingredients

  • 1 3/4 Cup Flour
  • 2 1/4 tsp baking powder
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 TBSP cold butter
  • 2 Eggs
  • 1/3 Cup 2% milk
  • 1/2 Cup chopped onion
  • 1/4 Cup Shredded Cheese
  • 6 bacon strips cooked and crumbled

Instructions

  1. In a large bowl combine the first five ingredients.
  2. Cut in butter until mixture resembles course crumbs.
  3. In a small bowl whisk eggs and milk.
  4. Stir into dry ingredients just until moistened.
  5. Fold in the onion, cheese and 2/3 of the bacon.
  6. Transfer the dough to a greased baking sheet.
  7. Pat into a 7 1/2 circle.
  8. Cut into wedges but don’t separate.
  9. Sprinkle with remaining bacon.
  10. Bake at 400 for 15-20 mins until golden brown.
