Baked Oatmeal

Ingredients

  • 2 Cups Oatmeal (quick or old fashioned)
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp almond extract
  • 1 cup milk
  • 2 Eggs Beaten
  • 1 cup (approx) Frozen peaches roughly chopped (While frozen)
  • 3/4 - 1 Cup Brown Sugar

Instructions

  1. Mix all ingredients in an 8x8 inch Baking dish.
  2. Cover and refrigerate overnight.
  3. In the morning, preheat oven to 325.
  4. Uncover and bake for 45-50 mins until top is firm and light brown.
  5. Cool slightly and serve.
