Blueberry Scones

Ingredients

  • 2 Cups Flour
  • 1/3 Cup Sugar
  • 2 tsp baking power
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1- 80z lemon yogurt
  • 1 egg lightly beaten
  • 1/4 cup melted margarine
  • 1 tsp lemon zest
  • 1 Cup Blueberries

Glaze:

  • 1/2 Cup Powdered sugar
  • 1 T lemon juice
  • 1/2 tsp lemon zest

Instructions

  1. Combine dry ingredients.
  2. Combine margarine, yogurt, egg and lemon zest.
  3. Stir moist ingredients into dry ingredients just until moistened.
  4. Fold in berries.
  5. Drop onto greased baking sheet.
  6. Bake at 400 for 15-18 mins.
  7. Glaze: Combine powdered sugar, lemon juice, and lemon zest. Drizzle over warm scones.
