Blueberry Streusel Muffins
Ingredients
- 2 1/2 cups flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of one orange
- 1 egg
- 3/4 cup buttermilk or 60z vanilla yogurt
- 2/3 cup canola
- 1 teaspoon pure vanilla extract
- 2 cups fresh or frozen berries blueberries
Streusel Topping:
- 1/3 cup butter
- 1/2 cup sugar
- 3/4 flour
Instructions
- Preheat oven to 375
- Grease Muffin cups
- In large bowl whisk together egg, buttermilk, oil, and vanilla.
- In another bowl combine flour, sugar, baking soda, baking powder, salt, and orange zest.
- Fold wet ingredients into dry ingredients until combined.
- Mix streusel ingredients.
- Spoon over muffins.
- Fill muffin cups and bake for 20-25 minutes.
