Blueberry Streusel Muffins

Ingredients

  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of one orange
  • 1 egg
  • 3/4 cup buttermilk or 60z vanilla yogurt
  • 2/3 cup canola
  • 1 teaspoon pure vanilla extract
  • 2 cups fresh or frozen berries blueberries

Streusel Topping:

  • 1/3 cup butter
  • 1/2 cup sugar
  • 3/4 flour

Instructions

  1. Preheat oven to 375
  2. Grease Muffin cups
  3. In large bowl whisk together egg, buttermilk, oil, and vanilla.
  4. In another bowl combine flour, sugar, baking soda, baking powder, salt, and orange zest.
  5. Fold wet ingredients into dry ingredients until combined.
  6. Mix streusel ingredients.
  7. Spoon over muffins.
  8. Fill muffin cups and bake for 20-25 minutes.
