Butter Toffee

Ingredients

  • 16 oz butter melted
  • 11/2c Sugar
  • 3 oz water
  • 1 tsp salt
  • 1 tsp vanilla
  • 25 oz Melted Dark Chocolate
  • Nuts, Sea Salt, etc for topping

Instructions

  1. Combine butter, sugar, water and salt in a large sauce pan
  2. Bring to a boil stirring constantly.
  3. Cook over moderate heat, stirring gently, until candy thermometer reads 298 degrees
  4. Remove from heat and stir in vanilla until well combined
  5. Pour mixture onto a silicone baking mat or good parchment paper.
  6. Spread out thinly and quickly before toffee sets.
  7. Allow to cool completely.
  8. Blot to remove excess oil from surface.
  9. Coat top with half of melted chocolate and sprinkle with topping of your choice.
  10. When chocolate has set, flip over.
  11. Spread rest of chocolate on this side and sprinkle with topping
  12. Allow to cool then break into bite size pieces
