Butter Toffee
Ingredients
- 16 oz butter melted
- 11/2c Sugar
- 3 oz water
- 1 tsp salt
- 1 tsp vanilla
- 25 oz Melted Dark Chocolate
- Nuts, Sea Salt, etc for topping
Instructions
- Combine butter, sugar, water and salt in a large sauce pan
- Bring to a boil stirring constantly.
- Cook over moderate heat, stirring gently, until candy thermometer reads 298 degrees
- Remove from heat and stir in vanilla until well combined
- Pour mixture onto a silicone baking mat or good parchment paper.
- Spread out thinly and quickly before toffee sets.
- Allow to cool completely.
- Blot to remove excess oil from surface.
- Coat top with half of melted chocolate and sprinkle with topping of your choice.
- When chocolate has set, flip over.
- Spread rest of chocolate on this side and sprinkle with topping
- Allow to cool then break into bite size pieces
