Charlene's Famous Pancakes

Ingredients
- 1 tsp vanilla
- 1 c flour
- 1 T baking powder
- 1/2 t baking soda
- 1/2 t salt
- 2 T sugar
- 1 egg
- 1 T oil
- 1 c buttermilk
- 1/3 c milk
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, whisk the egg, then whisk in the buttermilk, milk, oil, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir just until combined (a few lumps are fine).
- Heat a griddle or skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter per pancake onto the griddle.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip and cook until golden brown, about 1-2 minutes more.
- Serve warm.
