Cheeseburger Soup

Ingredients

  • 1 pound ground beef
  • 1/4 cup flour
  • 3/4 cup chopped onion
  • 3/4 shredded carrots
  • 3//4 cup diced celery
  • 4 cups diced potatoes
  • 2 cups velvet cubed
  • 1 1/2 cups milk
  • 1 tsp dried basil
  • 1 tsp dried parsley flakes
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 4 TBSP butter, divided
  • 1/4 cup sour cream
  • 3 cups chicken broth

Instructions

  1. Brow beef in large saucepan and drain. Set aside
  2. In saucepan, add 1 TBSP butter, onion, carrots, celery, parsley, and basil.
  3. Saute until tender
  4. Add broth, potatoes, and beef and bring to a boil. Reduce heat, cover and simmer 10-12 mins until potatoes are tender
  5. In a small skillet melt remaining butter and add flour. Cook and stir for 3-5 mins or until bubbly.
  6. reduce heat to low. Add to soup and bring to boil. Cook and stir for 2 mins.
  7. Stir in cheese, milk, salt and pepper. cook and stir until cheese melts.
  8. Remove rom heat and add sour cream.
