Cheeseburger Soup
Ingredients
- 1 pound ground beef
- 1/4 cup flour
- 3/4 cup chopped onion
- 3/4 shredded carrots
- 3//4 cup diced celery
- 4 cups diced potatoes
- 2 cups velvet cubed
- 1 1/2 cups milk
- 1 tsp dried basil
- 1 tsp dried parsley flakes
- 3/4 tsp salt
- 1/2 tsp pepper
- 4 TBSP butter, divided
- 1/4 cup sour cream
- 3 cups chicken broth
Instructions
- Brow beef in large saucepan and drain. Set aside
- In saucepan, add 1 TBSP butter, onion, carrots, celery, parsley, and basil.
- Saute until tender
- Add broth, potatoes, and beef and bring to a boil. Reduce heat, cover and simmer 10-12 mins until potatoes are tender
- In a small skillet melt remaining butter and add flour. Cook and stir for 3-5 mins or until bubbly.
- reduce heat to low. Add to soup and bring to boil. Cook and stir for 2 mins.
- Stir in cheese, milk, salt and pepper. cook and stir until cheese melts.
- Remove rom heat and add sour cream.
