Cheesy Egg Puffs

Ingredients

  • 1/2 Cup Butter (Melted)
  • 1/2 Cup Flour
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 4 Cups shredded cheese
  • 2 Cups Cottage Cheese
  • 16 oz browned sausage or bacon
  • 10 eggs
  • Optional: Peppers, Onion, or Tomatoes (cooked until softened)

Instructions

  1. In a mixer, combine flour, baking powder & salt.
  2. Add melted butter and mix.
  3. Add eggs and cheese.
  4. Stir in meat and veggies.
  5. Fill well greased muffin tins 3/4 full of mixture.
  6. Bake at 350 for 25-30 mins.

Tips

  • Spray tins well
  • Cook just shy of being set, they will re-warm better.
  • Cool and store flat in freezer bags
