Rah Rah's Chicken Enchiladas
Ingredients
- 2-3 lbs Chicken
- 1 Can Rotel
- 2 TBLS Minced Onion
- 1 tsp Cumin
- 1/2 tsp Cayenne Pepper
- 1 tsp chili powder
- 1 Can Black beans (Drained)
- 1 Can Kidney Beans (Drained)
- 1 Can Chili Beans
- 1 Can Diced Green Chilis
- 1 Can Corn (drained)
- 2-3 Cups Shredded cheese
- 3 cans Enchilada sauce
- 8 oz Sour cream
- Tortillas
Instructions
- Cook Chicken in skillet with Rotel, Onion, and spices.
- Drain off juice and cut into bite size chunks.
- Mix in large bowl: Beans, green chilies, corn, chicken, and 1 cup Cheese.
- Fill flour tortillas and roll up. Place in 9x13 pan
- Mix enchilada sauce with sour cream and pour over enchiladas.
- Sprinkle with remaining cheese.
- Bake 350 for 30-45 mins.

Note: There is enough to make 2 pans so freeze one for another day!
