Rah Rah's Chicken Enchiladas

Ingredients

  • 2-3 lbs Chicken
  • 1 Can Rotel
  • 2 TBLS Minced Onion
  • 1 tsp Cumin
  • 1/2 tsp Cayenne Pepper
  • 1 tsp chili powder
  • 1 Can Black beans (Drained)
  • 1 Can Kidney Beans (Drained)
  • 1 Can Chili Beans
  • 1 Can Diced Green Chilis
  • 1 Can Corn (drained)
  • 2-3 Cups Shredded cheese
  • 3 cans Enchilada sauce
  • 8 oz Sour cream
  • Tortillas

Instructions

  1. Cook Chicken in skillet with Rotel, Onion, and spices.
  2. Drain off juice and cut into bite size chunks.
  3. Mix in large bowl: Beans, green chilies, corn, chicken, and 1 cup Cheese.
  4. Fill flour tortillas and roll up. Place in 9x13 pan
  5. Mix enchilada sauce with sour cream and pour over enchiladas.
  6. Sprinkle with remaining cheese.
  7. Bake 350 for 30-45 mins.
  8. Note: There is enough to make 2 pans so freeze one for another day!
