Coconut Cream Pie
Ingredients
- 1 baked Pie Shell
- 3/4 Cup Sugar
- 3 TBLS Cornstarch
- 1/4 tsp Salt
- 2 Cups Milk
- 3 egg yolks slightly beaten
- 1 tsp vanilla
- 2 TBLS butter
- 1 Cup Flaked Coconut
Instructions
- Prepare pie shell in glass pie plate and set aside.
- Combine sugar, cornstarch, and salt in glass casserole dish.
- Add milk gradually.
- Mix well.
- Cook uncovered in microwave 7-8 minutes or until thick, Stirring each minute.
- Beat small amount of hot mixture into egg yolks, then return to hot mixture.
- Cook uncovered in microwave for 2-3 minutes, stirring after each minute.
- Add vanilla and butter to filling and stir well.
- Mix flaked coconut into cream filling.
- Cool to room temperature.
- Pour cooled filling into the baked pie shell
