Coconut Cream Pie

Ingredients

  • 1 baked Pie Shell
  • 3/4 Cup Sugar
  • 3 TBLS Cornstarch
  • 1/4 tsp Salt
  • 2 Cups Milk
  • 3 egg yolks slightly beaten
  • 1 tsp vanilla
  • 2 TBLS butter
  • 1 Cup Flaked Coconut

Instructions

  1. Prepare pie shell in glass pie plate and set aside.
  2. Combine sugar, cornstarch, and salt in glass casserole dish.
  3. Add milk gradually.
  4. Mix well.
  5. Cook uncovered in microwave 7-8 minutes or until thick, Stirring each minute.
  6. Beat small amount of hot mixture into egg yolks, then return to hot mixture.
  7. Cook uncovered in microwave for 2-3 minutes, stirring after each minute.
  8. Add vanilla and butter to filling and stir well.
  9. Mix flaked coconut into cream filling.
  10. Cool to room temperature.
  11. Pour cooled filling into the baked pie shell
