Kimbra's Carmel Corn

Ingredients

  • 1 Cup Butter
  • 2 Cups Brown Sugar
  • 1/2 Cup Corn Syrup
  • 1 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Vanilla
  • 5 quarts popped popcorn

Instructions

  1. Preheat oven to 250
  2. Place popcorn in very large bowl
  3. In medium saucepan melt butter.
  4. Stir in Brown Sugar, Corn Syrup, and salt.
  5. Bring to a boil.
  6. Boil for 4 minutes without stirring.
  7. Remove from heat.
  8. Stir in Soda and Vanilla. (be careful it will start to bubble up!)
  9. Pour in a thin stream over popcorn.
  10. Stir Popcorn until well coated.
  11. Place in large roasting pan.
  12. Bake for 1 hour, stirring every 15 minutes.
  13. Remove from oven.
  14. Let cool before storing
