Lemon Bars

Ingredients

  • 1 (18.25 ounce) package lemon cake mix with pudding
  • 1 pkg Lemon or Vanilla Pudding
  • 1 egg
  • 1/2 cup vegetable oil
  • 2 (8 ounce) package cream cheese
  • 2/3 cup white sugar
  • 2 tablespoon lemon juice

Instructions

  1. Preheat oven to 350.
  2. Mix Cake mix, Pudding, Egg and oil.
  3. Mixture will be slightly dry.
  4. Reserve one cup for the topping.
  5. Pat the rest into an ungreased 9x13 inch pan.
  6. Bake for 15 minutes.
  7. Set aside to cool.
  8. Beat the cream cheese, sugar and lemon juice until smooth.
  9. Spread over the baked crust.
  10. Crumble the reserved cake mix mixture over the top.
  11. Bake for 15 minutes, or until filling is set and lightly toasted.
  12. Cool before cutting into bars.
  13. Make glaze with Powdered sugar and lemon Juice to drizzle over top.
  14. also add lemon juice to the cake and lemon zest to creamcheese filling.
