Maple Cinnamon Oatmeal Cookies

Ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- 3/4 cup white sugar
- 2 large eggs
- 2 teaspoons maple extract
- 2 1/2 cups quick-cooking oats
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
Instructions
- Preheat oven to 350 degrees. Cream butter and sugars for 2 minutes until light and fluffy. Beat in eggs and maple extract.
- In a separate bowl, mix the oats, flour, baking soda, salt, and cinnamon.
- Add dry mixture to the creamed mixture and mix just until combined.
- Chill the dough for 30 minutes to prevent excessive spreading during baking.
- Drop dough by rounded tablespoonfuls 2 inches apart onto parchment-lined baking sheets. Bake 10-12 minutes until golden brown.
- Cool on the pan for a couple minutes before transferring cookies to cooling racks.
