Maple Cinnamon Oatmeal Cookies

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 3/4 cup white sugar
  • 2 large eggs
  • 2 teaspoons maple extract
  • 2 1/2 cups quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350 degrees. Cream butter and sugars for 2 minutes until light and fluffy. Beat in eggs and maple extract.
  2. In a separate bowl, mix the oats, flour, baking soda, salt, and cinnamon.
  3. Add dry mixture to the creamed mixture and mix just until combined.
  4. Chill the dough for 30 minutes to prevent excessive spreading during baking.
  5. Drop dough by rounded tablespoonfuls 2 inches apart onto parchment-lined baking sheets. Bake 10-12 minutes until golden brown.
  6. Cool on the pan for a couple minutes before transferring cookies to cooling racks.
