Mock Cracklin' Corn
Ingredients
- 4-5 strips bacon
- 1 tsp Soda
- 1 1/2 Cups White Corn meal
- 2 Cups Buttermilk
- 3 T flour
- 1 Egg
- 1 tsp Salt
- 2 T Bacon Drippings
Instructions
- Preheat oven to 450.
- Slowly fry bacon; remove from skillet.
- Drain and break into small pieces.
- Sift dry ingredients together.
- Add buttermilk and egg; mix well.
- Stir in bacon pieces and drippings.
- Put marble-sized bait of solid shortening into each muffin cup and place in hot oven.
- When shortening is hot, pour each muffin cup about 3/4 full of batter.
- Bake until golden; 15-20 mins.
