Mock Cracklin' Corn

Ingredients

  • 4-5 strips bacon
  • 1 tsp Soda
  • 1 1/2 Cups White Corn meal
  • 2 Cups Buttermilk
  • 3 T flour
  • 1 Egg
  • 1 tsp Salt
  • 2 T Bacon Drippings

Instructions

  1. Preheat oven to 450.
  2. Slowly fry bacon; remove from skillet.
  3. Drain and break into small pieces.
  4. Sift dry ingredients together.
  5. Add buttermilk and egg; mix well.
  6. Stir in bacon pieces and drippings.
  7. Put marble-sized bait of solid shortening into each muffin cup and place in hot oven.
  8. When shortening is hot, pour each muffin cup about 3/4 full of batter.
  9. Bake until golden; 15-20 mins.
