Muddy Buddy Truffles
## Ingredients - 3 cups Chex Mix - 1 1/4 cup creamy peanut butter - 1 cup powdered sugar (plus additional for rolling) - 2 cups semi-sweet chocolate

Ingredients
- 3 cups Chex Mix
- 1 1/4 cup creamy peanut butter
- 1 cup powdered sugar (plus additional for rolling)
- 2 cups semi-sweet chocolate
Instructions
- Crush your chex in a plastic bag and then pour into a large bowl.
- Mix the peanut butter, crushed chex, and powdered sugar together until fully combined.
- Refrigerate the truffle filling after putting it together and before scooping it into balls. This will help them keep their shape when you coat it in chocolate.
- Scoop the mixture into bite sized balls.
- Melt the chocolate in the microwave until smooth (or use a double boiler if needed).
- Dip your muddy buddy truffles into the melted chocolate and place them on parchment paper.
- Place them in the fridge for about 20-30 minutes to let the chocolate harden back up. This is important for the next step! Powdered sugar sticks really well to cold, refrigerated chocolate.
- Roll each ball in your powdered sugar to coat. Double roll them in the powdered sugar to help ensure the powdered sugar stays on!

Makes: 10-12 truffles
Storage: Keep in an airtight container for about 5 days, or possibly 7 days in the fridge.
Freezing: The balls can be frozen and will need to stay out a minute or two so you can bite into them.
