## Ingredients - 3 cups Chex Mix - 1 1/4 cup creamy peanut butter - 1 cup powdered sugar (plus additional for rolling) - 2 cups semi-sweet chocolate

Muddy Buddy Truffles

Ingredients

  • 3 cups Chex Mix
  • 1 1/4 cup creamy peanut butter
  • 1 cup powdered sugar (plus additional for rolling)
  • 2 cups semi-sweet chocolate

Instructions

  1. Crush your chex in a plastic bag and then pour into a large bowl.
  2. Mix the peanut butter, crushed chex, and powdered sugar together until fully combined.
  3. Refrigerate the truffle filling after putting it together and before scooping it into balls. This will help them keep their shape when you coat it in chocolate.
  4. Scoop the mixture into bite sized balls.
  5. Melt the chocolate in the microwave until smooth (or use a double boiler if needed).
  6. Dip your muddy buddy truffles into the melted chocolate and place them on parchment paper.
  7. Place them in the fridge for about 20-30 minutes to let the chocolate harden back up. This is important for the next step! Powdered sugar sticks really well to cold, refrigerated chocolate.
  8. Roll each ball in your powdered sugar to coat. Double roll them in the powdered sugar to help ensure the powdered sugar stays on!
  9. Enjoy!

Makes: 10-12 truffles

Storage: Keep in an airtight container for about 5 days, or possibly 7 days in the fridge.

Freezing: The balls can be frozen and will need to stay out a minute or two so you can bite into them.
