Peach Crumb Pie

Ingredients

Pie Crust:

  • 1 9-inch buttermilk pie crust

Peach Filling:

  • 6 large peaches or 7 smaller peaches (sliced and peeled if desired)
  • 1 tablespoon cornstarch
  • 2 teaspoons lemon juice

Crumb Topping:

  • 1/2 cup butter, melted (1 stick)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Press pie crust into a 9-inch pie plate. Refrigerate while preparing remaining ingredients.
  3. Whisk together sugars, flour, cinnamon, ginger and salt in a medium bowl. Drizzle melted butter over the top and use fingers to work the butter into the flour mixture until coarse crumbles form.
  4. In another bowl, toss peach slices with cornstarch, lemon juice, and about 3/4 cup of the butter mixture. Place in the pie crust.
  5. Crumble the remaining butter mixture on top of the peaches generously.
  6. Refrigerate assembled pie for 15-30 minutes if time permits to help crumbs hold their form while baking.
  7. Place pie on a baking sheet covered with parchment paper and bake for 45-50 minutes until filling is bubbly and topping is golden brown. Cover with foil after 30 minutes if browning too quickly.
