Peanut Butter Waffles with Peanut Butter Syrup

Ingredients
For the Waffles:
- 2 cups flour
- ¼ cup sugar
- 1 Tbsp baking powder
- ¼ tsp salt
- 2 eggs
- 2 cups milk
- ¼ cup oil
- 1 tsp vanilla
- ½ cup peanut butter (crunchy recommended)
For the Peanut Butter Syrup:
- ⅔ cup sugar
- ½ cup water
- ⅓ cup peanut butter
- ½ tsp vanilla
Instructions
Waffles:
- Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.
- In another bowl, whisk together eggs, milk, oil, vanilla, and peanut butter until smooth.
- Add wet ingredients to dry ingredients and stir until barely combined. Cook in a hot waffle iron and serve warm.
Peanut Butter Syrup:
- Bring sugar and water to a full rolling boil in a small saucepan.
- Remove from heat and stir in peanut butter and vanilla.
- Stir until peanut butter is melted and syrup is smooth. Syrup thickens as it cools.
