Fresh Pho Noodles
Ingredients
- Chicken breast and bone in thighs
- whole cloves
- whole coriander
- whole star anise
- whole onion and ginger
- fish sauce
- white sugar
- fresh Thai basil
- lime
- chopped green onions
- hoison sauce
- sriracha
Instructions
- Put all chicken in pot of water on high heat until it boils, then take the chicken out, pour out the water, wash the pot and put the chicken back in with water or chicken broth. fill up the pot to wear all the chicken is covered in liquid. boil on med-high heat for 20 minutes or until the chicken is done. Take chicken out and leave it in a container until it has cooled down enough to shred.
- Put all dry spices on small pan and roast until you smell the aroma. Take pan off the heat and place the spices in a cheese cloth with a whole cinnamon stick and place that in the broth with the chicken.
- Peel and chop down in big chunks. Place in oven on broil until charred
- After you take chicken out, turn heat down to low and simmer for 3 1/2 hours. At the 3 hour mark, add fish sauce (start with 1/4 a ladle) and white sugar (start with 2 tablespoons). Add fish sauce and sugar to the flavor you want, if needed, add more water/chicken broth) Serve with fresh Thai basil, lime, chopped green onions, hoison sauce and sriracha.
