Pumpkin Cake Roll

Ingredients

  • 3 Eggs
  • 1 Cup Sugar
  • 2/3 Cup Pumpkin
  • 1 tsp Lemon Juice
  • 3/4 Cup flour
  • 1 tsp Baking Powder
  • 2 tsp Cinnamon
  • 1 tsp Ginger
  • 1/2 tsp Salt
  • 1/2 tsp nutmeg
  • 1 Cup Nuts

Filling:

  • 1 Cup Powdered Sugar
  • 8 oz Cream Cheese
  • 4 tsp oleo
  • 1/2 tsp Vanilla

Instructions

  1. Beat 3 eggs for 5 minutes. (this is important)
  2. Mix sugar, pumpkin, lemon juice.
  3. Add to eggs.
  4. Sift together dry ingredients
  5. Combine with liquid mixture.
  6. Use wax paper to line a jelly roll pan then grease the paper
  7. Spread in jelly roll pan.
  8. Top with nuts
  9. Bake at 350 for 15 minutes
  10. Turn out on towel that has been sprinkled with powdered sugar.
  11. Roll up warm in towel and let cool.
  12. Filling: Whip ingredients together.
  13. When cake is cool, unroll and spread with filling.
  14. Reroll and chill
