Pumpkin Cake Roll
Ingredients
- 3 Eggs
- 1 Cup Sugar
- 2/3 Cup Pumpkin
- 1 tsp Lemon Juice
- 3/4 Cup flour
- 1 tsp Baking Powder
- 2 tsp Cinnamon
- 1 tsp Ginger
- 1/2 tsp Salt
- 1/2 tsp nutmeg
- 1 Cup Nuts
Filling:
- 1 Cup Powdered Sugar
- 8 oz Cream Cheese
- 4 tsp oleo
- 1/2 tsp Vanilla
Instructions
- Beat 3 eggs for 5 minutes. (this is important)
- Mix sugar, pumpkin, lemon juice.
- Add to eggs.
- Sift together dry ingredients
- Combine with liquid mixture.
- Use wax paper to line a jelly roll pan then grease the paper
- Spread in jelly roll pan.
- Top with nuts
- Bake at 350 for 15 minutes
- Turn out on towel that has been sprinkled with powdered sugar.
- Roll up warm in towel and let cool.
- Filling: Whip ingredients together.
- When cake is cool, unroll and spread with filling.
- Reroll and chill
