Pumpkin Pancakes
Ingredients
- 1 1/4 Cup Flour
- 2 TBLS Sugar
- 2 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/2 tsp Ginger
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
- 1 pinch cloves
- 1 1/4 cup milk
- 1/3 cup Pumpkin Puree
- 2 TBLS Melted butter
- 1 egg
Instructions
- Whisk flour, sugar, baking powder, spice and salt in a bowl.
- In a separate bowl, whisk together milk, pumpkin, butter, and egg
- Fold into dry ingredients.
- Spray or grease a skillet over medium heat.
- Pour in 1/4 cup batter for each pancake.
- Cook about 3 minutes per side.
- Makes about six 6 inch pancakes.
- Can double and freeze pancakes for later use.
