Pumpkin Whoopie pies

Ingredients

  • 3 cups flour
  • 1 Tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup oil
  • 1 15 oz can pumpkin
  • 2 eggs
  • 1 tsp vanilla

Filling:

  • 1 8 oz package cream cheese
  • 1 stick butter
  • 16 0z powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350
  2. Beat together brown sugar, sugar, oil, and pumpkin
  3. Add eggs one at a time, mixing well after each addition then add vanilla
  4. In a separate bowl sift together dry ingredients. slowly incorporate in wet ingredients until just combined.
  5. Scoop equal amounts of batter onto baking sheet- they should be about 2 inches in diameter
  6. Bake for 11 mins and cool on a rack
  7. Filling: Beat together cream cheese and butter.
  8. Add powdered sugar and vanilla
  9. Frost flat side of half the pies and top with another piece.
  10. Enjoy right away or refrigerate!
