Ranger Cookies

Ingredients

  • 1 Cup Shortening (or 1/2 Cup Butter, 1/2 Cup Applesauce)
  • 1 Cup White Sugar
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 1 Cup Coconut
  • 2 Cups Rice Krispies or Corn Flakes
  • 2 Cups Quick Oats
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp Baking Powder
  • 1 tsp Soda
  • 2 Cups Flour
  • 1 Cup Nuts (Optional)

Instructions

  1. Preheat Oven to 350.
  2. Cream Shortening & Sugars.
  3. Add beaten Eggs, Vanilla, Oatmeal, and Coconut.
  4. Add Sifted dry ingredients and Nuts.
  5. Last, add cereal being careful not to break it.
  6. Form into Small balls and flatten.
  7. Bake for 10-12 minutes
