Salted Caramel Apple Butter

Ingredients

Apple Butter:

  • 3 lbs Gala apples, peeled, cored and cut into 1-inch pieces
  • 1 C apple juice (100% unsweetened juice)
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1/2 tsp all spice

Caramel Sauce:

  • 1 TBSP unsalted butter
  • 1 TBSP packed brown sugar
  • 1 TBSP maple syrup
  • 1/4 tsp sea salt
  • 1 TBSP heavy cream

Instructions

Apple Butter:

  1. Prep slow cooker with cooking spray.
  2. Add apples, apple juice, and all spices to slow cooker.
  3. Cover and cook on high for one hour.
  4. Turn off cooker.
  5. Blend one-third of mixture in food processor until smooth; repeat until all apples are blended.
  6. Pour blended mixture back into slow cooker.
  7. Cook on low for 6-8 hours until mixture reduces by half.
  8. Set aside.

Caramel Sauce:

  1. Combine maple syrup, butter, and brown sugar in skillet on medium-high heat.
  2. Whisk until thickened and bubbly.
  3. Continue whisking while adding salt and heavy cream (1-2 minutes); remove from heat.
  4. Slowly stir caramel sauce into apple mixture.
  5. Cool completely.
  6. Scoop into 4 oz lidded jars.
