Salted Caramel Apple Butter

Ingredients
Apple Butter:
- 3 lbs Gala apples, peeled, cored and cut into 1-inch pieces
- 1 C apple juice (100% unsweetened juice)
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
- 1/2 tsp all spice
Caramel Sauce:
- 1 TBSP unsalted butter
- 1 TBSP packed brown sugar
- 1 TBSP maple syrup
- 1/4 tsp sea salt
- 1 TBSP heavy cream
Instructions
Apple Butter:
- Prep slow cooker with cooking spray.
- Add apples, apple juice, and all spices to slow cooker.
- Cover and cook on high for one hour.
- Turn off cooker.
- Blend one-third of mixture in food processor until smooth; repeat until all apples are blended.
- Pour blended mixture back into slow cooker.
- Cook on low for 6-8 hours until mixture reduces by half.
- Set aside.
Caramel Sauce:
- Combine maple syrup, butter, and brown sugar in skillet on medium-high heat.
- Whisk until thickened and bubbly.
- Continue whisking while adding salt and heavy cream (1-2 minutes); remove from heat.
- Slowly stir caramel sauce into apple mixture.
- Cool completely.
- Scoop into 4 oz lidded jars.
