Black Bean Soup

Ingredients

  • 10 Slices Bacon Finely Chopped
  • 2 medium onions chopped
  • 6 garlic cloves, pressed
  • 1 1/2 cups canned chopped tomatoes
  • 2 TBLS Ketchup
  • 2 tsp Worcestershire sauce
  • 1 TBLS Chili Powder
  • 4 15 oz cans black beans drained not rinsed
  • 1 can Beer
  • Kosher salt and black pepper
  • 1 bunch Cilantro
  • juice of 1/2 lime
  • Sour cream for garnish
  • Grated Cheese for Garnish

Instructions

  1. Cook bacon in Large Soup pot until it starts to give up fat, about 4 min.
  2. Stir in onions and cook until translucent
  3. Stir in Garlic and cook till you smell it.
  4. Drain off bacon Grease.
  5. Add broth, tomatoes, ketchup, worcestershire, and chili powder
  6. Stir in beans, turn up to high heat and bring to boil.
  7. Adjust heat so soup is bubbling gently and cook 10 mins.
  8. Season with salt and pepper.
  9. Pick off thick stems from cilantro wash and shake dry.
  10. Chop coarsely and stir into soup when it has been simmering 10 mins
  11. Cook until the soup thickens. Stir in Lime juice.
