Black Bean Soup
Ingredients
- 10 Slices Bacon Finely Chopped
- 2 medium onions chopped
- 6 garlic cloves, pressed
- 1 1/2 cups canned chopped tomatoes
- 2 TBLS Ketchup
- 2 tsp Worcestershire sauce
- 1 TBLS Chili Powder
- 4 15 oz cans black beans drained not rinsed
- 1 can Beer
- Kosher salt and black pepper
- 1 bunch Cilantro
- juice of 1/2 lime
- Sour cream for garnish
- Grated Cheese for Garnish
Instructions
- Cook bacon in Large Soup pot until it starts to give up fat, about 4 min.
- Stir in onions and cook until translucent
- Stir in Garlic and cook till you smell it.
- Drain off bacon Grease.
- Add broth, tomatoes, ketchup, worcestershire, and chili powder
- Stir in beans, turn up to high heat and bring to boil.
- Adjust heat so soup is bubbling gently and cook 10 mins.
- Season with salt and pepper.
- Pick off thick stems from cilantro wash and shake dry.
- Chop coarsely and stir into soup when it has been simmering 10 mins
- Cook until the soup thickens. Stir in Lime juice.
