Smothered Mexican Lasagna

Ingredients

  • 2 lbs ground turkey or ground beef
  • 1 TBLS Minced Onion
  • 1 pkg Taco Seasoning (or 3 TBLS of homemade taco seasoning)
  • 1/2 Cup Water
  • 1 can Rotel
  • 1 Can Corn
  • 1 can Chili Beans
  • 1 (15 0z) Ricotta Cheese
  • 2 eggs
  • flour tortillas
  • 1 (8 oz) Sour Cream
  • 1/2 - 1 Cup Salsa
  • Shredded cheese

Instructions

  1. Preheat oven to 400.
  2. Brown Turkey (or beef) in a large skillet with onion.
  3. Once browned drain if needed.
  4. Mix in rotel, corn, water, Taco seasoning, and chili beans.
  5. Reduce heat to medium and simmer for awhile.
  6. In a medium bowl mix eggs and ricotta cheese.
  7. Place tortilla to line the bottom of 9x13 pan.
  8. Spread 1/3 of the ricotta cheese mixture on tortillas. Sprinkle with shredded cheese.
  9. Spread 1/3 of meat mixture over cheese.
  10. Continue layering until all ingredents are used.
  11. Mix Sour Cream and Salsa together and pour over the top.
  12. Top with Shredded cheese. Bake for 20 mins.
