Smothered Mexican Lasagna
Ingredients
- 2 lbs ground turkey or ground beef
- 1 TBLS Minced Onion
- 1 pkg Taco Seasoning (or 3 TBLS of homemade taco seasoning)
- 1/2 Cup Water
- 1 can Rotel
- 1 Can Corn
- 1 can Chili Beans
- 1 (15 0z) Ricotta Cheese
- 2 eggs
- flour tortillas
- 1 (8 oz) Sour Cream
- 1/2 - 1 Cup Salsa
- Shredded cheese
Instructions
- Preheat oven to 400.
- Brown Turkey (or beef) in a large skillet with onion.
- Once browned drain if needed.
- Mix in rotel, corn, water, Taco seasoning, and chili beans.
- Reduce heat to medium and simmer for awhile.
- In a medium bowl mix eggs and ricotta cheese.
- Place tortilla to line the bottom of 9x13 pan.
- Spread 1/3 of the ricotta cheese mixture on tortillas. Sprinkle with shredded cheese.
- Spread 1/3 of meat mixture over cheese.
- Continue layering until all ingredents are used.
- Mix Sour Cream and Salsa together and pour over the top.
- Top with Shredded cheese. Bake for 20 mins.
